Kitchen Help

Always the best Kitchen Helper...

Here I am helping Mommi create her famous French Breakfast Puffs / Doughnut Muffins. Finished product looks like this...

In case you hoomans wanna know how to make some yourself... be aware the Mommies call these their 'nip, cause it's hard to stop at just "one hit."

1 Mini Muffin Tin
1 Alternate Tin For Excess Batter, Second Muffin Tin, Or Stand-Alone Muffin Liners
3-4 Throwaway Tins 

Muffin Ingredients
1 3⁄4 C All-Purpose Flour 
 1 1⁄2 tsp Baking Powder  
1⁄2 tsp Salt
1⁄2 tsp Nutmeg
1⁄2 tsp Cinnamon
1⁄3 C Canola / Veggie Oil 
3⁄4 C Granulated Sugar
1 Egg
3⁄4 C Milk

Dredging Medium
1⁄4 (+) C Butter  

1⁄3 (+) C Sugar
1 (+) Tbsp Cinnamon 1 (+) tsp Nutmeg

Preheat oven 350 ̊ .

Spray muffin tins with spray oil (use paper towel to wipe into crevices and take away excess.)

In bowl: Blend together with spoon by hand all of the Muffin Ingredients. 

Once blended: pour into baggie, snip corner, use as pastry bag to pipe into muffin spots to just about full. If any excess remains, pour onto tinfoil lined/spay oiled toaster-oven pan OR stand-alone muffin liners OR another muffin tin with water in empty spots. 

Bake for 15 minutes if using mini muffin tin; up to 20 minutes using standard muffin tins. (Toothpick test for doneness)

While baking: Melt butter, mix coating ingredients. Create assembly line of butter, cinnamon mixture (in a throwaway tin) and empty throwaway tin or plate for finished product. Mommi doesn't measure these parts for real - goes by looks.

 Once muffins done: pop out of muffin tin with spoon and into a throwaway tin to start the assembly line. Dip each muffin into butter then roll around in coating mixture, place finished muffins in tin/plate. Continue until done with all muffins. Enjoy!

  1. Oh boy no wonder your Mommi says those muffins are "nip for humans" - because my Mom said "YUM" when she saw then and read the recipe. I do believe she will be attempting to make some of these. My Dad is encouraging her to do it ASAP!!!
